I have just bought a replacement thermostat but the capillary is twice as long as the one to be replaced, is there an easy way to shorten the capillary ?

The capillary must not be shortened as it contains a pressurised gas. Either carefully coil any excess and fit it near the thermostat body or order the manufacturers original thermostat.
