I am unable to release the nut that holds the fan in place.
I am aware that it is opposite thread but the oven has been in use for 10 years or so, is there a particular method for releasing this nut. Not sure about using WD40 in the oven as the smell would linger.

- I struggled with removing the fan blade from my NEFF oven. 10mm nut came off ok using socket set and just holding the blade in position with my hand, problem was then removing the additional shaped washer and the blade itself. Found that gripping the threaded end with some mole grips and them rotating the blade by hand did the trick, although I had to work at it.
- It doesn't matter ,as if your changing the whole fan assembly you don't need any of the old fan,,) and wd40 is fine to use ,but clean off all parts left in oven ,
- I've just removed mine from my cooker thats been used every day for more than ten years. You are right to unscrew the nut by turning clock wise(this is opposite to normal).Hold the fan blade with one hand - maybe with a glove on and using a 10mm spanner undo the nut, it does not matter if you have to use excessive force or even shear the fan motor spindle as obviously you are removing the fan blade to replace the fan motor i presume.
